The chausson aux pommes at Barcellos Salon Sucre in Kreuzberg sits precisely on that edge, allowing heat and chemistry to draw out the sweetness of the apples and complement it with a pastry of that offers multiple textures. A touch of lemon juice gives it the brightness that rounds out the beginning of a good morning. The quiche Lorraine is also pretty damn good.
